Creative cooking

Well friends it has been a few days! I have been keeping busy doing house errands and such. We finally signed on with a contractor who started work today! yay. I guess it lokks like the are no new cabinets in my future though. They did not sustain enough damage?? WTF! I will be getting some new flooring and carpets hopefully and they will prime the walls in the kitchen...and that's about it folks. Gene is being interviewed on channel 6 local news for the break in. They will be visiting our new house today at 4pm. Maybe someone will take pity and offer me some new cabinets, right? Anyways we had a super busy weekend and I am still recovering. I bought some gorgeous onions at the farmers market last week and made a delightful French onion soup with them..yum-o.
Here's the recipe:
3 medium onion sliced into thin rings
2 cloves garlic peeled and chopped
6 cup beef broth (I use better than boullion and water)
1 tbsp butter (1 for frying with one to add to stock
1 tbsp olive oil
3 tbsp worcestshire sauce(pardon my spelling but bottle lost its label!)
Bread slices of your choice (I used day old french bread)
4-6 slices Muenster(cheaper than required Guyere cheese)

Heat frying pan, adding butter and olive oil. Soften onions in pan, adding garlic the last 3-5 min. of softening. Place broth, butter, and sauce in stock pot. Add onion and garlic. Bring to a boil then simmer for 20 minutes. place bread slices on baking sheet and place one slice of cheese on each. Broil on low until melty and slightly browned. Float a bread on top of each bowl of soup. (Make enough for a second round!) Serve with a salad. YUMMMY!
This could easily be made into a veggie meal by using a veggie broth instead of beef.

yum! I love homemade french onion soup. And I'd be happy to help sand and paint your cabinets- then they'd be sorta like new. :)
